We seem to hear about a new oil on the market every month— coconut, palm, hemp. But it can be hard to understand which one to use for which purpose with all the hype about each oil. Although not technically oils, butter, vegetable shortening, and lard are also popular cooking fats, and they have their own characteristics just like their very close siblings (maybe more like half-siblings).
