Most properties have the kitchen as the hub. Unfortunately, microscopic bacteria and germs are also a hub. "The visitors that passes through a regular kitchen, with folks coming and going — in relation to the food training and meals storage that takes place there — definitely opens it up to all sorts of contamination," says Randall Phebus, Professor of Food Safety and Defense at Kansas State University.
